Menu costs, team performance and daily service all sit within this Sous Chef role in Nelson, New Zealand. At a premium waterfront dining venue, you will act as Assistant Kitchen Manager, reporting to the Head Chef - Kitchen Manager. The position carries decision-making responsibility and authority to take full charge when the Head Chef is away.
This permanent appointment provides a minimum of 30 hours a week, including weekends and public holidays. Applicants must already have the right to work in New Zealand. The accredited employer may be able to sponsor a work visa for the right person.

Key Responsibilities
- Manage daily kitchen operations alongside the Head Chef and assume full charge during their absence.
- Plan and produce menus and specials, costing them to achieve the required gross profit.
- Recruit kitchen staff below management level, organise training and rosters, and manage team performance.
- Meet kitchen budgets for cost of goods, wage cost and gross profit while ordering stock, managing suppliers and maintaining accurate stock with minimal waste.
- Maintain food safety practice, the Food Control Plan and documented kitchen systems.
Requirements & Eligibility
- Hold the Level 5 National Diploma in Hospitality (Kitchen Management) and have a minimum of 3 years in kitchen management.
- Bring budgeting and costing skills together with organisational and time management skills.
- Have outstanding knowledge of local and international food and beverage.
- Understand IT and cloud-based software, including email, Word and Excel.
- Have the right to work in New Zealand.
