Bread production and pastry preparation come together in this full-time Baker position in Bunbury, WA. Working alongside the Bread Team Leader and Production Manager, you will mix white doughs, shape sourdough and apply your understanding of fermentation to the bakery's output.
The schedule runs from 2am to 12pm over 4 days per week, Monday to Thursday, with weekends off. It is a 38 hour week, with overtime added if necessary. Sponsorship is available for the right person.

Key Responsibilities
- Prepare white dough mixes and form sourdough for baking.
- Bake sourdough using a three level bread oven, applying knowledge of its fermentation process.
- Roll puff pastry and apply an understanding of croissant dough fermentation.
- Control stock used in bakery production.
Requirements & Eligibility
- Show a demonstrated passion for producing quality cabinet items and bring previous volume bakery experience.
- Have experience contributing to a team, with excellent communication skills.
- Bring experience in preparation, service and kitchen management, as well as operating a commercial bread oven.
- Hold formal trade qualifications in commercial cooking or equivalent.
- HACCP experience is desirable; a high emphasis on food hygiene is expected.
- Offer a positive working attitude, an energetic work ethic and adaptability.
- Be able to work very early.
