A Brisbane hotel needs a Head Chef to bring its bistro, bar meals and growing events operation under clear kitchen leadership. This full-time role combines Head Chef and Kitchen Manager responsibilities, with a salary of $85,000 - $100,000 per year.
You will shape modern Australian menus and organise service for everyday dining as well as large celebrations, sporting lunches and charity events. Commercial judgement is as important as consistent food quality: purchasing, staffing and waste all sit within your remit. Sponsorship is available for the right candidate.

Key Responsibilities
- Guide, mentor and develop chefs and kitchen attendants, establishing a positive and professional kitchen culture.
- Design and cost modern Australian menus for bistro dining, bar meals and events, keeping presentation consistent.
- Coordinate event preparation, staffing and service timing with the functions team to deliver catering.
- Control purchasing, stock, food expenditure, kitchen labour and waste within agreed budgets; take a hands-on part in service and maintain a calm, organised kitchen under pressure.
- Uphold rigorous hygiene, food safety, allergen and WHS standards.
Requirements & Eligibility
- Experience as a Head Chef or Kitchen Manager, with a strong foundation in hotel dining and high-volume functions or banqueting.
- Culinary skill and sound financial judgement, with the ability to deliver busy meal services alongside large events.
- Clear communication and a practical approach, coupled with commitment to developing the team.
- Hold Certificate III in Commercial Cookery and Food Safety Supervisor certification.
