Keeping food consistent while a busy service moves quickly is central to this full-time Sous Chef position in Sydney, NSW. The restaurant and pub needs an experienced kitchen leader who can support the Head Chef, develop colleagues and take charge when the Head Chef is away.
The work connects seasonal menu planning with daily decisions about ordering, staffing, food safety and expenditure. You will help manage food and labour costs while reviewing the quality of preparation and presentation. The venue has a young, enthusiastic kitchen team, and there is a route to sponsorship for the right candidate.

Key Responsibilities
- Contribute seasonal, locally sourced menu ideas and cost them against the forecast budget.
- Support daily kitchen operations covering orders, staffing and food safety, taking the lead whenever the Head Chef is absent.
- Oversee food preparation and presentation against venue standards, reviewing and adjusting product delivery to maintain quality and consistency.
- Organise high-volume services for efficient and effective delivery.
- Work within labour, product and operating budgets under the direction of the Head Chef and management.
- Develop kitchen colleagues through training and guidance.
Requirements & Eligibility
- Have worked as a Sous Chef in a similar restaurant or pub, with experience of high-volume service.
- Be able to assist the Head Chef with monitoring and managing food and labour budgets.
- Lead effectively, including training and mentoring staff.
- Demonstrate consistently high food standards while complying with HACCP procedures.
